Cooked to order

The menu

Every wrap on this board is naturally gluten free. Not a modified version, not a substitute — that's simply what a tapioca wrap is.

Prices in AUD. The board can change with the seasons and with what's good at the market that morning.

Celiac-safe, not just gluten free
  • There is no gluten at the stall at all — not in a single filling, not in the pan, not on the bench.
  • Prep happens in a kitchen with no gluten in it. None stored, none used.
  • Separate equipment and separate utensils throughout, so there is nothing to cross-contaminate.

If you're celiac and want to know exactly how we handle it, ask Maria at the stall — she'd rather talk you through it than have you wonder.

Other allergens

Gluten is the one thing you never have to ask about. Every wrap we sell is 100% gluten free — the fillings as well as the tapioca base.

Other allergens are a separate question. Some fillings contain dairy, nuts, egg, sesame or fish — the Peanut Butter and Vegan "Nutella" wraps both contain nuts.

So if you have an allergy other than gluten, please tell us when you order. We would much rather stop and check with you than guess.

If you haven't had one before

What actually is a tapioca wrap?

It's a flatbread made from cassava starch. The starch goes into a hot pan dry, and within a minute it binds into a soft, slightly chewy wrap — no flour, no eggs, no dough. Then it gets folded around your filling and handed straight to you.

The indigenous peoples of Brazil have been making it for more than a thousand years — they call it beiju. It has nothing to do with the tapioca pudding you might be thinking of.
